For those of you that read my experiment on preserving wine for 5 days after opening the wine bottle, you’ll know that the most effective is to pour it into a smaller container. Well, I decided to do a stress test. 5 days is easy, but what about 3 months? I decided to find out.
The Experiment
Pretty simple, really. I opened a fresh bottle of 2005 Avalon Cabernet Sauvignon and poured it into a glass container with little or no air between the top of the wine and the screw cap. I stored it as I would any other bottle of wine, in my handy little Vinotemp wine cellar.

3 months later.
Looks fine. Then the sniff test. Sniff… Smells fine. A little muted, but no hints of vinegar or overwhelming presence of nuts that I typically associate with oxidized wine. So far, so good.
Guess what? It taste fine as well. Here are my tasting notes:
Smell: The bouquet is slightly muted when compared to the freshly opened control bottle. All the floral notes are still there, just less apparent.
Taste: No difference in taste. They were both delicious!
Texture: The 3-month old felt a little chalky when compared to the control bottle.
So there you have it! You can safely store leftover wine for up to 3 months, and possibly longer in smaller containers.
